i {heart} snow days again...and fried tortellini


Remember before there was internet watching the news in your parents bed at like 5:30 in the morning hoping, no praying, that school will be cancelled! And if it was...nothing beats the excitement you felt! except maybe Christmas morning...So In the true spirit of a snow day or days, (since DISD has been closed for 3 days, which means Tom does not have to work on his birthday, which is today! Happy Birthday Love!) we have been sleeping late, staying in our pajamas all day, crafting, watching Netflix on demand, and eating delicious food....which means its been difficult to fit school work into that schedule...and working out is like the anti-snow day thing to do so that's taken a back seat!
Anyways, I was getting a little stir crazy so we decided to try our hand at some fried tortellini! I've always seen this and wanted to try it! And just for the record, it was super delicious and would be fabulous Super Bowl Grub. Here's what we did (Pioneer Woman Style).
We used a variation of a Paula Deen recipe, but did not make our own tortellini like she does. We used store-bought three cheese tortellini...no shame here.


You'll need a cup of all purpose flour in a shallow dish...


Three eggs lightly beaten in a medium sized bowl...

 

3/4 Cup bread crumbs, 1/4 Cup parmesan cheese and some parsley sifted together in another bowl...

 And, your pasta of course...


1. Simmer the tortellini for three minutes...

2. Drain and coat the pasta in flour...

3. Then in the egg...
4. Then in the bread crumb mixture...
5. Oh yeah, you'll need to heat oil to 375 degrees (we used vegetable oil instead of peanut oil which is what PD calls for because we didn't have it.)
6. Place the tortellini in the hot oil in batches. Let fry and soak up all that greasiness for 2 minutes or until a crisp goldeny color...
7. Drain onto a papertowl covered plate and let cool for a minute or so...
8. Then serve'em up! Delicious with marinara sauce! mmmmmmm.....i wish I could make more of these suckers but dare I brave the cold and risk my life to go buy more tortellini?....it just may be worth it...
